What size dessert glass do I need?
For a portion after a three-course meal, 18 to 22 cl is plenty. If the dessert is the main event, with ice cream, sauce and whipped cream, count on 25 to 30 cl. Larger sorbet coupes of around 40 cl are more presentation pieces.
Which glass is best for tiramisu?
A straight glass with no waist, because any curve in the wall distorts the layers. Count on 20 to 25 cl per portion and build it up with a piping bag rather than a spoon, so the inside stays clean up to exactly where you want it.
Why do dessert glasses go dull in the dishwasher?
Because of the fat in cream, caramel and chocolate. A short, cool cycle does not shift it and leaves a haze behind. Pre-rinse with warm water, wash hot enough to release the fat and rinse afterwards with clean water.
What exactly is a verrine?
A straight, narrow little glass in which you build a dessert or amuse in visible layers. The name comes from French cooking. Because the wall is straight and there is no stem underneath, the layers stay clean and the glass stacks easily.
