Which bar spoon length do I need?
For a mixing glass or a tin, 30 to 33 centimetres is the standard. If you stir in a tall pitcher or a carafe, you need 40 or 50 centimetres so your hand stays above the rim.
Why does a bar spoon have a twisted stem?
The spiral lets the spoon turn between your fingers while your hand stays almost still. That way the spoon follows the wall of the glass and you chill the drink without knocking ice shards loose.
What is the difference between stirring and shaking?
Stirred, a cocktail stays clear, weighty and silky. Shaken, it becomes airy and slightly more diluted. Anything made only of spirits you stir; as soon as juice, egg or cream comes in, you shake.
How long should you stir a cocktail?
Twenty to thirty turns along the inside wall of the mixing glass. You can see it from the outside: once the glass is completely frosted, the cocktail is at temperature and diluted enough.
What do you use the back of the spoon for?
For layering. Pour a liqueur slowly over the rounded back just above the surface, and it spreads out instead of sinking, staying as a separate layer on top of the drink.
