Which tamper size fits my portafilter?
Measure the inner diameter of the basket. The usual size is 58 mm, but 57 mm baskets exist too. A millimetre of play is already noticeable, because the water then runs along the edge of the puck instead of through it.
Which milk jug size do I need?
For a single cappuccino 35 or 50 cl works, for two cups at once 75 cl, and for a row of orders 100 cl. In too large a jug the milk does not rise high enough into the spout, which makes latte art harder.
What do you use a WDT tool for?
A WDT tool uses thin needles to break up the clumps in the ground coffee bed before you tamp. Without that step the water finds the path of least resistance and the shot runs unevenly, giving sour and bitter flavours at the same time.
How do I clean a milk jug properly?
Rinse the jug cold first and only then wash it warm. Warm water actually sets milk protein onto the steel, leaving a dull film behind. Wipe the steam wand straight after every jug, before the milk dries on.
