Which knife do you use for citrus zests?
The garnishing knife of 7.5 centimetres has a curved edge that lets you follow the curve of an orange or lemon. That way you take off a wide strip of peel without the bitter white pith underneath.
Can these kitchen knives go in the dishwasher?
Technically yes, but it is not a good idea. Knives knock against other cutlery in the basket and sit for a long time in a salty, aggressive solution. Washing by hand and drying immediately keeps the edge sharp considerably longer.
What is a nakiri knife and what do you use it for?
A nakiri is a Japanese vegetable knife with a straight blade that touches the board along its full length. That lets you cut through in one movement, without sawing back, and gives you even slices of cucumber, ginger or apple.
How do you keep a knife sharp?
Hone the edge regularly with a sharpening steel. That removes no material but straightens the wafer-thin edge that folds over while cutting. Only when honing has no more effect is it time to sharpen properly on a stone.
