Which Essential bowl do you choose for young red wine?
The 65 cl bowl. It offers the largest contact surface with air, so a young wine with firm tannin becomes noticeably softer and more fragrant within a quarter of an hour than it would in a smaller glass.
How full do you pour a 65 cl wine glass?
To just below the widest point of the bowl, which comes to about 15 cl. That leaves room to swirl, and the aroma gathers in the air above the wine instead of escaping.
Isn't a 30 cl flute rather large?
For a sparkling glass 30 cl is generous, and that is deliberate. You pour it half full, so the sparkling wine warms up more slowly and air stays above it in which the aroma collects during a long aperitif.
Why are there water marks on the foot?
That is limescale from tap water left behind on the broad foot of large bowls. Let the glasses drain after the programme with the door slightly open, then polish them dry with a clean cloth.
