Which glass do you use for a mimosa?
A slim flute or a tulip flute of 16 to 22 centilitres. The narrow shape holds the carbonation and the opening concentrates the scent of the orange. A wide glass lets the bubbles disappear within ten minutes.
Do you pour the juice or the sparkling wine first?
The juice first, to about halfway, then the sparkling wine slowly down the inside wall. The other way round the glass foams over, because the fruit fibres in fresh juice release the carbon dioxide all at once.
Why do the bubbles not last?
Usually because of a thin film of washing-up liquid or of a tea towel. Rinse flutes thoroughly and dry them with a lint-free cloth washed without fabric softener. An effervescence point on the base also helps the bubbles on their way.
What is the difference between a flute and a coupe?
A flute is narrow and tall and holds the carbonation for a long time. A coupe is wide and shallow, releases more aroma but loses bubbles faster. For a mimosa with fresh juice the flute is the better choice.
