What exactly is a copita?
A copita is the traditional Spanish sherry glass: a narrow tulip bowl on a stem of roughly 12 to 20 centilitres. The taper concentrates the aroma and holds back the alcohol vapour, so you pick up the almond notes of a fino.
How much do you pour into a sherry glass?
About six centilitres, which is no more than a third of the glass. That leaves enough room to swirl and keeps the aroma hanging above the surface. Of pedro ximénez you usually pour even less.
Can you use the same glass for port?
Yes, port and sherry glasses share the same tulip shape and the same sizes. Both drinks are fortified and are poured in small measures. For full styles such as oloroso a small wine glass works well too.
At what temperature do you serve sherry?
Fino and manzanilla around seven degrees, so just like white wine. Amontillado and oloroso cooler than room temperature but not ice cold, somewhere around thirteen degrees. Pedro ximénez may be lightly chilled or served neat after the meal.
