Does a narrow champagne glass keep the bubbles longer?
Yes. The smaller the surface in contact with the air, the more slowly the carbonation escapes. A narrow 17 cl flute therefore holds the bubbles noticeably longer than a wide coupe of the same capacity.
Why pour champagne in two goes?
Because the foam rises high at first and then settles. Pour a splash, wait for the foam to fall back and then top up to about two thirds. That keeps the glass from overflowing and leaves room for the aroma.
How do I stop a stemmed glass from breaking?
Hold the glass by the bowl rather than the stem, and when drying do not twist one part against the other. The join between bowl and stem is the weakest point, and that is where practically all breakage starts.
Can I use the champagne glass for cocktails as well?
Certainly. Sparkling classics such as a french 75 or a kir royal are made for exactly this format. For shaken cocktails with a layer of foam, the 17.5 cl cocktail glass is more suitable.
