Which Cervoise size suits a 33 cl bottle?
The 38 cl goblet gives a 33 cl bottle enough room for a full head of foam. If the beer only just fits, choose 32 cl and pour a little more slowly. The 50 cl goblet is intended for 75 cl bottles.
Why does my head of foam collapse so quickly?
Almost always because of grease in the glass. Traces of washing-up liquid, fingerprints or a tea towel previously used on plates break the foam down. Rinse the glass thoroughly and keep a separate cloth for glassware.
Is the Arcoroc Cervoise dishwasher safe?
Yes, the glass is tempered and made for daily use in hospitality. Place the goblets upright in the rack rather than upside down, otherwise water stays on the foot and you get limescale marks.
At what temperature should you serve specialty beer?
At around eight degrees the spicy and fruity notes come through best. Below five degrees the beer closes up and you mostly taste carbonation. So take the bottle out of the fridge a little earlier than you would with lager.
