What is the difference between a Nick and Nora and a martini glass?
A martini glass has a straight, conical bowl and a wide rim, which makes it slosh easily. A Nick and Nora is smaller and tulip-shaped: it holds the aroma better and you spill far less.
Why is a coupette only 12 cl?
In serves without ice, the drink warms up the moment it sits in the glass. A small capacity means the glass is empty before the cocktail turns lukewarm. For strong, undiluted drinks that is exactly the point.
How do I stop the stem from breaking?
Put stemmed glasses in a dishwasher basket with compartments so they cannot knock against each other. Most stems break not from heat but from tipping over, or because you pick the glass up by the bowl while the foot is wet.
Do I need to chill these cocktail glasses beforehand?
Yes, for every serve without ice in the glass. Put the glass in the freezer for ten minutes, or fill it with iced water while you make the cocktail. Pour the water away just before you serve.
