Orange punch
per pitcher, not per glass
Mix the Aperol, orange juice, and lime juice in a pitcher. You can prepare this part up to a day in advance.
Chill the pitcher; only add ice at the last moment, otherwise the punch will become diluted.
Fill the long drink glasses with ice, pour in the punch until two-thirds full, and top up with prosecco.
Place two orange slices in the glass and serve with a straw.

Orange without food coloring
Orange is the easiest party color to create naturally. Orange juice is the base, but freshly squeezed gives a much deeper color than juice from a carton. Aperol brings that characteristic red-orange glow and bitterness, so your cocktail does not turn into lemonade; see the Aperol Spritz. Apricot and peach nectar give a softer orange with plenty of body. Carrot juice sounds strange but works: combined with orange and ginger, it creates an intensely orange drink that tastes surprisingly good. And grenadine at the bottom of a glass of orange juice creates the gradient of a Tequila Sunrise, always a hit at an orange party.
The right glass
An orange party calls for different rules than a cocktail evening: people are outside, there is walking around, and something occasionally gets broken. So choose sturdy, thick-walled long drink glasses from 33 to 47 cl, large enough for plenty of ice and robust enough for a garden full of guests. Stackable is a bonus if you need to set out twelve of them. Clear glass shows the orange at its best, and a larger size means you need to top up less often.

How much punch do you need for a group?
Allow for two 25 cl glasses per person for the first hour. For twelve guests, that comes to about six liters over an afternoon, so two to three full pitchers.
Can you make the punch in advance?
Yes, up to a day in advance, as long as you keep the ice and bubbles separate. Add them only when serving; otherwise your punch will be flat and watery within an hour.
How do you keep a punch cold without diluting it?
Freeze orange juice in ice cubes and use them instead of regular ice. They cool just as well but make your punch stronger rather than more diluted.
