What is Patrón?

Tequila still made with a stone wheel

Patrón has been made since 1989 at Hacienda Patrón in Atotonilco el Alto, in the highlands of Jalisco. The brand built its reputation by doing something unusual in the tequila world: the agaves are not steamed in an autoclave but slowly cooked in brick ovens, and some of the juice is still pressed with a tahona, a massive volcanic stone wheel that rolls the cooked agave flat.

That tahona juice is blended with juice from a modern roller mill, and the two distillates together give Patrón its character: the wheel brings earthy, sweet depth, while the mill brings freshness and citrus. Everything is 100% blue weber agave, everything is bottled at 40%, and every bottle is finished, numbered and sealed with beeswax by hand. Bacardi acquired the brand in 2018.

What does Patrón taste like?

Cooked agave, citrus and black pepper

Nose

Sweet agave & citrus

Sweet cooked agave up front, with citrus zest, green herbs and a hint of black pepper. The Añejo also brings vanilla and dried fruit.

Palate

Full and slightly peppery

Fuller and earthier than many tequilas, with distinct agave juice and a pleasant peppery edge. The tahona component gives it extra body.

Finish

Clean and dry

A dry, clean finish with pepper and citrus. The Reposado and Añejo finish rounder, with vanilla and oak.

Sweet 3/5
Spicy 3/5
Fruity 3/5
Strength 3/5

Flavor profile of Patrón Silver. The Reposado scores higher on sweetness, while the Añejo is sweeter and spicier; El Cielo is the softest and most floral.

How to drink it

Three ways to drink Patrón

A 100% agave tequila doesn't need salt and lime: that practice comes from cheap mixto tequila. Take small sips at room temperature.

Neat, without salt and lime

4 cl in a narrow tasting glass or tequila glass. Let it sit in your mouth briefly before swallowing: that way you taste the cooked agave and pepper instead of just alcohol.

As a Margarita

50 ml Patrón Silver, 25 ml fresh lime juice and 20 ml triple sec shaken vigorously with ice and strained into a margarita glass with a half-salted rim. Using fresh lime instead of mix makes a huge difference.

As a Paloma

50 ml Patrón Silver with grapefruit soda, a squeeze of lime and plenty of ice in a highball glass with a salted rim. Mexico's most popular tequila cocktail, and much more refreshing than a Margarita.

What percentage of alcohol is in Patrón?
All Patrón bottles you find here are 40%: the Silver, the Reposado, the Añejo and the El Cielo.
What is a tahona and why does Patrón use one?
A tahona is a massive wheel made of volcanic stone that crushes cooked agave to extract the juice. It is slow and labor-intensive, but produces a more earthy, sweeter juice. Patrón blends this with juice from a modern roller mill.
What is the difference between Silver, Reposado and Añejo?
The aging. Silver is unaged, making it the freshest; Reposado rests in oak for more than two months and develops vanilla and caramel notes; and Añejo ages for more than a year, becoming amber-colored, rounder and woodier.
Should you drink Patrón with salt and lime?
No. Salt and lime were once used to mask the harshness of cheap mixto tequila. Patrón is 100% agave and is perfectly good to drink neat, in small sips at room temperature.
Which Patrón is best for a Margarita?
The Silver. It is fresh and citrusy and lets the lime shine. The Reposado also works, but it gives you a rounder, woodier Margarita.
Is Patrón 100% agave?
Yes. Only blue Weber agave from the highlands of Jalisco is used, with no added sugars. This must also appear on the label: '100% agave'.
