The story
Punch is the ancestor of nearly all cocktails: sailors from the British East India Company brought the concept from Asia in the seventeenth century - the name probably comes from the Hindi word 'panch', meaning five, referring to the five ingredients. In the Caribbean, punch took its definitive form with rum, and each island developed its own version; in Barbados and Jamaica, the rhyme is part of the cultural heritage. Before there were bars, people drank punch from shared bowls - conviviality was literally the starting point.

Remember the rhyme and you can vary endlessly with whatever you have at home. Never make the punch too strong: 'four of weak' (juice and ice) is there for a reason – it is a drink to savor over an afternoon, not a sprint.

One, two, three, four: the rhyme
The Caribbean rhyme goes: one of sour, two of sweet, three of strong, four of weak. These are parts, not centiliters. If you take one part as 5 cl, you end up with 5 cl lime juice, 10 cl syrup, 15 cl rum, and 20 cl juice or water. Our recipe follows the same logic on a larger scale. The advantage is that you never need a measuring cup: an espresso cup, glass, or mug works just as well, as long as you consistently use the same measure.
Calculating for ten or twenty guests
Our basic recipe makes about a liter of mix for six to eight people, or two 15 cl glasses per person. For ten guests, multiply everything by one and a half: 45 cl rum, 22 cl lime juice, 15 cl syrup, 38 cl pineapple juice, and 30 cl orange juice. For twenty guests, double that again and use two pitchers instead of one, because a pitcher holding more than two liters pours poorly. Also allow for about half a kilo of ice per person.
Alcohol-free rum punch
Replace the 30 cl rum with 30 cl strong, chilled rooibos tea and two tablespoons of dark cane sugar syrup; the tea brings tannins and the syrup provides the molasses notes you would normally get from the rum. Keep all other quantities the same: 15 cl lime juice, 25 cl pineapple juice, 20 cl orange juice, and a few dashes of bitters, although these contain a trace of alcohol. Let the punch infuse for at least two hours, because without alcohol it takes longer for the flavors to meld. Freshly grated nutmeg is still essential here.
Which fruit works best
Choose firm fruit that can sit in liquid for a few hours without falling apart: orange and lime slices, pineapple chunks, halved strawberries, and pieces of mango. Bananas, melon, and kiwi become mushy and make the punch cloudy. Add the fruit only half an hour before serving; otherwise, it releases too much water. Allow approximately 300 grams of fruit per liter of punch. Freeze some pineapple chunks and use them instead of ice cubes, so the punch does not become diluted while it sits on the table.
